Every jar is extracted with minimal processing to preserve the honey's natural flavor, aroma, pollen, enzymes, and character. Because our bees forage on a variety of wildflowers throughout Virginia's Northern Neck, every harvest is unique. No two seasons are exactly alike.
What Does "Raw Local Honey" Mean?
Raw honey is honey that has been extracted from the comb, strained to remove small pieces of wax and other natural debris, and bottled without excessive heat or heavy filtration.
Unlike many commercial honeys found in grocery stores, raw honey retains its natural characteristics—including its flavor, color, aroma, and tendency to crystallize over time.
Why Is Some Honey Light and Other Honey Dark?
One of the most fascinating things about honey is that its color naturally changes throughout the season.
Honey color depends almost entirely on the flowers the bees visited while collecting nectar. Early-season honey is often very light in color with a mild, delicate flavor. As different flowers bloom throughout the summer and fall, the honey may become amber or even dark brown with a richer, more robust taste.
Neither is better than the other. Light and dark honey simply reflect the natural diversity of the nectar sources available to the bees during that particular harvest.

Why Does Honey Crystallize?
Crystallization is completely natural and is actually a sign that your honey is raw and minimally processed.
Over time, the natural glucose in honey forms tiny crystals. Some varieties crystallize within a few weeks, while others may remain liquid for many months.
Crystallized honey is perfectly safe to eat and has not spoiled.
How to Return Honey to a Liquid State?
If you prefer your honey in liquid form, simply place the jar in a container of warm water.
Avoid boiling water or microwaving your honey, as excessive heat can reduce many of the natural qualities that make raw honey unique.
A little patience and gentle warming are all that's needed.
Storage
Honey is one of nature's most stable foods.
Store your honey tightly sealed at room temperature in a cool, dry place.
Refrigeration is not recommended because it speeds up crystallization.
Properly stored, honey can remain enjoyable for many years.
